Stuck in a Rut

Help! As you may or may not know, Chad is gove every other day which means when it comes to dinner on those days, it often gets a little scary. Brooklyn's food of choice is cereal or Wendy's. I need ideas of quick, easy, kid friendly meals that I can make when Chad is at work. All ideas would be SO welcome!

Also, I need to go meet my new neighbors and want to bring them some type of treat. Does anyone have any good recipes for something that is easy to make and goes a long way? What would be a good treat from a neighbor that you don't know yet? .... My neighbors aren't extremely friendly yet, I'm trying to win them over!

anywho, tom works until about 8:30 every night so we're totally in the same boat. we too eat a ton of wendys!

but i do a lot of crockpot recipes because they're low mess, low stress and cheap! i'll email you some recipes if you're interested.

as for the wallpaper...i got nothin'! i've never had to remove wallpaper before (thank heaven!) let me know you find a helpful trick!

Baked ham in the oven or cooked in a crockpot.

A normail size ham can go a long way,especially when it's cut into smaller pieces.

It's cost efficient and low maintenance. You stick it in the oven and wait for it to cook.

I usually have ham when I invite 10-20 people over.

I've also found that having a potluck work great when getting to know folks.

For example, you can provide the main dish while others bring the side dishes. If people can't bring any, I still encourage them to attend to eat the food. Sometimes people feel bad that they can't bring anything but remind them that it's okay. They can participate by eating the food.

It's a simple way I've learned that works well when I invite people over.

The most important thing I've learned when I invite people over is to make the meal as simple as possible.

If I'm stressing too much in the preparation, taking too long to make it or worrying too much on how it looks, then it's not meeting my purpose. Keeping it simple and informal allows me to enjoy the time I have with those I invited compared to stressing over the unimportant stuff.

Another simple recipe is stir-fry. You can use thin slices of beef or chicken cut in bite size pieces. It's easy-- stir fry whatever meat you have flavored with your favorite spices and add vegetables over steamed rice. You can eat them in a bowl which creates for another informal setting.

With getting the kids involved, you can have them help prepare desserts (sliced bananas, strawberries, kiwi, peaches over a bowl of ice cream works the easiest too).

Or you can get the ready to bake cookies which saves a tonload of time.


They can even help with setting up the table or sitting around the living room. It helps direct their energy into something positive and productive. But I'm sure you already knew that.
